Made with simple ingredients and bright citrus flavor, it’s perfect for a quick healthy lunch or diner.

🧾 Ingredients:

• 12 chicken drumsticks or thighs
• 1 bunch chives
• 1 bunch of curly leaf parsley
• 1/4 cup olive oil
• 3 tbsp lemon juice
• 2 tbsp honey
• 2 cloves of garlic
• 1 tsp salt
• 6-8 large basil leaves

👩‍🍳 How to Prepare:

✔ Place the chives and parsley into a food processor, using only the leafy tops of the parsley and not the stems. Add the olive oil, a squeeze of lemon juice, and the honey. Blend until the mixture forms a smooth herb paste.
✔ Add the garlic and a small pinch of salt, then blend again. Next, add the basil and pulse once more until everything is well combined.
✔ Coat the chicken evenly with the herb marinade. Place the chicken in an oven-safe pan, cover with plastic wrap, and refrigerate to marinate for 1–2 hours, or overnight for deeper flavor (I marinated mine overnight).
✔ Remove the plastic wrap and bake the chicken uncovered in a 350°F oven for about 25 minutes, until it begins to lightly brown. Then cover the pan with foil and return it to the oven for another 30 minutes, allowing the chicken to cook completely through. To check for if done, cut into a piece and make sure it is fully cooked.
✔ Once the chicken is cooked through, it’s ready to serve and enjoy.

Tip: To get it brown quickly I used the Air Fryer, and then when it was brown, I put it back in the casserole with the juice!
